Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick cooking spray.

  2. Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken to an even thickness of about 1/2 inch. Season both sides of the chicken breasts with salt and pepper.

  6. Place the stuffed chicken breasts seam-side down in the prepared baking dish. Brush the tops of the chicken breasts with olive oil or melted butter.

  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

  8. Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.
