Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 2 tablespoons capers, drained (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:

    • Place each chicken breast between two pieces of plastic wrap. Pound them to an even thickness, about 1/2 inch. Season both sides with salt and pepper.

  4. Combine and Serve:

    • Return the chicken breasts to the skillet, coating them with the lemon sauce.
    • Cook for another 2-3 minutes, allowing the flavors to meld together.
    • Garnish with chopped fresh parsley before serving.
