Honey Garlic Chicken Stir Fry

Ingredients:

For the Chicken Marinade:

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon honey
  • 1 tablespoon cornstarch (or arrowroot powder for paleo)

For the Stir Fry:

  • 2 tablespoons olive oil or sesame oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1/2 cup snap peas
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth or water
  • 2 tablespoons soy sauce (or tamari)
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Sesame seeds and chopped green onions for garnish (optional)

Instructions:

  1. In a mixing bowl, combine the thinly sliced chicken breasts with soy sauce, minced garlic, grated ginger, honey, and cornstarch. Toss until the chicken is evenly coated. Let it marinate for at least 15-30 minutes.

  2. Heat 1 tablespoon of olive oil or sesame oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken and stir-fry for 4-5 minutes, or until it is cooked through and no longer pink. Remove the chicken from the skillet and set it aside.

  3. In the same skillet, add the remaining tablespoon of oil. Add the sliced bell peppers, broccoli florets, julienned carrot, snap peas, and minced garlic. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.

  4. In a small bowl, mix together the chicken broth (or water), soy sauce, and honey. Pour the sauce over the vegetables in the skillet.

  5. Return the cooked chicken to the skillet and toss everything together until the chicken and vegetables are coated in the sauce. Cook for an additional 2-3 minutes, or until the sauce has thickened slightly.

  6. Season the stir-fry with salt and pepper to taste. If desired, sprinkle sesame seeds and chopped green onions over the top for garnish.

  7. Serve the Honey Garlic Chicken Stir Fry hot over cooked rice, quinoa, or cauliflower rice. Enjoy this delicious and flavorful dish!
