Green Chili Chicken is a flavorful dish with tender chicken cooked in a tangy and spicy green chili sauce. Here's a simple recipe to make it:

Ingredients:

1.5 lbs (about 680g) boneless, skinless chicken breasts or thighs, diced
Salt and pepper, to taste
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 (4 oz) cans diced green chilies
1 cup chicken broth
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional, for extra heat)
Juice of 1 lime
1/4 cup chopped fresh cilantro, plus more for garnish
Optional toppings: shredded cheese, sour cream, diced avocado, chopped green onions

Instructions:

Season and Sear Chicken: 

Season diced chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.

Sauté Onion and Garlic:

 In the same skillet, add chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.

Prepare Green Chili Sauce: 

Add diced green chilies (with their juices) to the skillet with the onion and garlic. Stir in chicken broth, ground cumin, dried oregano, paprika, and cayenne pepper (if using). Bring the mixture to a simmer.

Simmer:

 Return the browned chicken to the skillet, nestling it into the green chili sauce. Let the chicken simmer in the sauce for about 10-15 minutes, or until it is cooked through and tender, and the sauce has thickened slightly.

Add Lime Juice and Cilantro: 

Stir in the lime juice and chopped fresh cilantro. Taste and adjust seasoning with more salt and pepper if needed.

Serve: 

Serve the green chili chicken hot, garnished with additional chopped cilantro and your choice of toppings such as shredded cheese, sour cream, diced avocado, or chopped green onions. Enjoy with cauliflower rice or low-carb tortillas for a complete meal.
