Chicken Marsala is a classic Italian-American dish featuring tender chicken breasts cooked in a rich and savory Marsala wine sauce. Here's a recipe to make Chicken Marsala:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Optional: 1 tablespoon cornstarch (mixed with 1 tablespoon water) for thickening sauce

Instructions:

  1. Prepare the Chicken:

    • Place each chicken breast between two pieces of plastic wrap and pound them to an even thickness, about 1/2 inch.
    • Season both sides of the chicken breasts with salt and pepper.
    • Dredge the chicken in flour, shaking off any excess.
  2. Cook the Chicken:

    • In a large skillet, heat 2 tablespoons of butter and olive oil over medium-high heat.
    • Add the chicken breasts to the skillet and cook for about 3-4 minutes on each side until they are golden brown and cooked through.
    • Once cooked, transfer the chicken to a plate and set aside.
  3. Make the Marsala Sauce:

    • In the same skillet, add the remaining butter. Once melted, add the sliced mushrooms and minced garlic. Sauté until the mushrooms are browned and the garlic is fragrant, about 4-5 minutes.
    • Pour in the Marsala wine and chicken broth, scraping up any browned bits from the bottom of the pan. Let the mixture simmer for about 10 minutes to reduce slightly.
    • If you prefer a thicker sauce, you can add the cornstarch mixture at this point and stir until the sauce thickens.
  4. Finish the Dish:

    • Reduce the heat to low and stir in the heavy cream. Simmer for another 2-3 minutes until the sauce has thickened slightly.
    • Return the cooked chicken breasts to the skillet, spooning the sauce over them. Let them simmer in the sauce for another 2-3 minutes to absorb the flavors.
    • Garnish with chopped fresh parsley before serving.
