Chicken And Veggies Skillet

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 bell pepper, diced (any color you prefer)
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1/4 cup grated Parmesan cheese (optional, for garnish)
  • Fresh basil or parsley, chopped, for garnish

Instructions:

  1. Season the chicken pieces with salt and pepper.

  7. Once everything is heated through and the flavors have melded together, remove the skillet from the heat.

  8. Serve the Chicken and Veggies Skillet hot, garnished with grated Parmesan cheese and chopped fresh basil or parsley if desired.
