Instructions:

  1. In a blender, combine the eggs, cream cheese, almond flour, erythritol, and vanilla extract. Blend until smooth and well combined.

  2. Heat a non-stick skillet or crepe pan over medium heat and add a small amount of butter or coconut oil to grease the pan.

  3. Pour about 1/4 cup of the crepe batter into the skillet, swirling it around to evenly coat the bottom of the pan.

  4. Cook the crepe for 2-3 minutes, or until the edges start to lift and the bottom is lightly golden brown. Use a spatula to carefully flip the crepe and cook for an additional 1-2 minutes on the other side.

  5. Repeat with the remaining batter, greasing the pan as needed between crepes.

  6. Once all the crepes are cooked, serve them warm with your favorite keto-friendly toppings such as sugar-free syrup, fresh berries, whipped cream (made with heavy cream and sweetener), or a sprinkle of powdered erythritol.

These keto crepes are versatile and can be enjoyed for breakfast, dessert, or as a snack. They're also great for meal prep as you can make a batch ahead of time and store them in the refrigerator or freezer for later use. Enjoy!
