Instructions:
In a small bowl, whisk together all the ingredients for the teriyaki sauce: soy sauce, honey, rice vinegar, sesame oil, minced garlic, minced ginger, cornstarch, and water. Set aside.
Heat 1 tablespoon of olive oil or sesame oil in a large skillet or wok over medium-high heat.
Add the sliced chicken breasts to the skillet and cook until browned and cooked through, about 4-5 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of oil. Add the sliced bell peppers, broccoli florets, julienned carrot, and sliced onion. Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp.
Return the cooked chicken to the skillet with the vegetables.
Pour the teriyaki sauce over the chicken and vegetables in the skillet. Stir well to coat everything evenly with the sauce.
Cook for an additional 1-2 minutes, or until the sauce has thickened and everything is heated through.
Remove the skillet from heat and serve the teriyaki chicken stir fry hot, over cooked rice or cauliflower rice.
Garnish with sesame seeds and chopped green onions, if desired.
This Teriyaki Chicken Stir Fry is delicious, nutritious, and perfect for a quick weeknight meal. Enjoy!
