Instructions:
Preheat your oven to 375°F (190°C). Grease a baking dish large enough to hold the chicken breasts in a single layer.
Use a sharp knife to cut a pocket into the side of each chicken breast, being careful not to cut all the way through. Season the inside and outside of each chicken breast with salt and pepper.
In a mixing bowl, combine the chopped spinach, ricotta cheese, grated Parmesan cheese, minced garlic, dried basil, dried oregano, and red pepper flakes (if using). Mix until well combined.
Stuff each chicken breast with the spinach and cheese mixture, dividing it evenly among the chicken breasts. Secure the openings with toothpicks if needed.
Place the stuffed chicken breasts in the prepared baking dish. Drizzle olive oil over the top of each chicken breast.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
Remove the toothpicks from the chicken breasts before serving.
Sprinkle shredded mozzarella cheese over the top of each chicken breast and return to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.
Once done, remove from the oven and let the chicken rest for a few minutes before serving.
