Instructions:
Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter or cooking spray.
Season the diced chicken breasts with salt and pepper to taste.
Heat olive oil in a large skillet over medium-high heat. Once hot, add the diced chicken breasts and cook until browned on all sides, about 5-6 minutes. Remove the chicken from the skillet and set aside.

Sprinkle shredded mozzarella cheese over the top of the chicken mixture.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
Once done, remove from the oven and let it cool for a few minutes before serving.
Garnish with chopped fresh parsley if desired.
