Here's a recipe for Keto Creamy Chicken Casserole:

Ingredients:

  • 2 lbs boneless, skinless chicken breasts, diced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cups broccoli florets
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter or cooking spray.

  2. Season the diced chicken breasts with salt and pepper to taste.

  3. Heat olive oil in a large skillet over medium-high heat. Once hot, add the diced chicken breasts and cook until browned on all sides, about 5-6 minutes. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add the minced garlic, diced onion, and diced bell pepper. Cook, stirring occasionally, until the vegetables are softened, about 3-4 minutes.

  5. Add the broccoli florets to the skillet and cook for an additional 2-3 minutes.

  6. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer.

  7. Stir in the grated Parmesan cheese, Italian seasoning, paprika, and red pepper flakes (if using). Cook, stirring occasionally, until the sauce thickens slightly, about 2-3 minutes.

  8. Return the cooked chicken to the skillet, stirring to coat it evenly with the creamy sauce and vegetables.

  9. Transfer the chicken mixture to the prepared baking dish, spreading it out evenly.

  10. Sprinkle shredded mozzarella cheese over the top of the chicken mixture.

  11. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.

  12. Once done, remove from the oven and let it cool for a few minutes before serving.

  13. Garnish with chopped fresh parsley if desired.
