Spinach Stuffed Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cups fresh spinach leaves, chopped
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Toothpicks or kitchen twine for securing

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:

    • Using a sharp knife, cut a horizontal slit along the side of each chicken breast to create a pocket for stuffing. Be careful not to cut all the way through.
    • Season both sides of the chicken breasts with salt and pepper.

  4. Stuff the Chicken:

    • Spoon the spinach and cheese mixture into the pockets of each chicken breast, dividing evenly. Press the pockets closed to seal in the filling.
    • Secure the openings with toothpicks or kitchen twine to prevent the filling from spilling out during cooking.
  5. Bake the Chicken:

    • Place the stuffed chicken breasts in a baking dish lined with parchment paper or aluminum foil.
    • Transfer the baking dish to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C) when measured with a meat thermometer.
  6. Serve:

    • Once baked, remove the toothpicks or twine from the chicken breasts.
    • Serve the Spinach Stuffed Chicken hot, garnished with fresh herbs if desired, and with your favorite side dishes.
