Skillet Chicken With Mushroom

 

Here's a recipe for Skillet Chicken with Mushrooms:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 tablespoon chopped fresh parsley (for garnish, optional)

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.

  2. Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts to the skillet.

  3. Cook the chicken breasts for about 5-6 minutes on each side, or until they are golden brown and cooked through. The internal temperature should reach 165°F (75°C). Remove the chicken breasts from the skillet and set them aside on a plate.

  4. In the same skillet, add the butter. Once melted, add the sliced mushrooms and minced garlic. Cook, stirring occasionally, until the mushrooms are tender and golden brown, about 5-6 minutes.

  5. Pour in the chicken broth and scrape the bottom of the skillet to deglaze it, picking up any browned bits for extra flavor.

  6. Stir in the heavy cream and dried thyme. Bring the mixture to a simmer and let it cook for 2-3 minutes until slightly thickened.

  7. Return the cooked chicken breasts to the skillet, nestling them into the mushroom sauce.

  8. Allow the chicken to heat through in the sauce for another 2-3 minutes.

  9. Garnish with chopped fresh parsley if desired, then serve the skillet chicken with mushrooms hot.
