Instructions:
Season both sides of the chicken breasts with salt and pepper to taste.
In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the cooked bacon from the skillet and set aside, leaving the bacon drippings in the skillet.
In the same skillet with the bacon drippings, add the olive oil. Add the seasoned chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet for extra flavor.
Stir in the heavy cream, grated Parmesan cheese, Italian seasoning, and paprika. Bring the mixture to a simmer and cook for 2-3 minutes until the sauce thickens slightly.
Return the cooked chicken breasts to the skillet, coating them evenly with the creamy bacon sauce. Let them simmer in the sauce for another 2-3 minutes.
Once done, remove the skillet from the heat and garnish the Creamy Bacon Chicken with the cooked bacon pieces and chopped fresh parsley if desired.
