Instructions:

  1. Season the chicken pieces with salt and pepper to taste.

  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken pieces to the skillet in a single layer. Cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the freshly squeezed orange juice, orange zest, soy sauce (or tamari), rice vinegar, sweetener, sesame oil, minced garlic, and grated ginger. Bring the mixture to a simmer over medium heat.

  4. In a small bowl, mix 1 tablespoon of water with 1 teaspoon of xanthan gum until well combined and smooth. Gradually pour the xanthan gum mixture into the simmering sauce while whisking continuously. Continue to cook and whisk for 1-2 minutes, until the sauce thickens.

  5. Return the cooked chicken to the skillet, stirring well to coat it evenly with the orange sauce. Cook for an additional 1-2 minutes to heat the chicken through and allow the flavors to meld.

  6. Once done, remove the skillet from the heat.

  7. Serve your Keto Orange Chicken hot, garnished with sesame seeds and chopped green onions if desired.

Enjoy your flavorful and tangy Keto Orange Chicken! It's a delicious low-carb alternative to the traditional version.
