Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
  • Salt and pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or sweetener of your choice (optional)
  • 1 teaspoon sesame oil (optional)
  • Cooked rice or noodles, for serving
  • Sliced green onions and sesame seeds for garnish (optional)

Instructions:

In a small bowl, whisk together the lemon juice, soy sauce, and honey until well combined. If using, add the sesame oil for additional flavor.

Combine Everything: 

Return the cooked chicken to the skillet with the vegetables. Pour the lemon sauce over the chicken and vegetables, tossing everything together until evenly coated. Cook for another 1-2 minutes to heat through and allow the flavors to meld.

Serve:
