Lemon butter chicken is a delightful dish that features tender chicken breasts cooked in a tangy and creamy lemon butter sauce. Here's a simple recipe to make it:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season both sides of the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and cook for about 1 minute, or until fragrant.

  7. Stir in the heavy cream and continue to cook for another 2-3 minutes, or until the sauce has thickened slightly.
  8. Return the chicken breasts to the skillet and spoon the sauce over them. Let them simmer in the sauce for a few minutes to heat through.
  9. Garnish with chopped fresh parsley before serving.
