Spinach stuffed chicken is a tasty and elegant dish that features tender chicken breasts filled with a flavorful spinach and cheese mixture. Here's a simple recipe to make it:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach leaves, chopped
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket for the stuffing. Be careful not to cut all the way through.
  3. Season the inside and outside of each chicken breast with salt and pepper.
  4. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for about 1 minute, or until fragrant.
  5. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  6. In a mixing bowl, combine the cooked spinach, ricotta cheese, Parmesan cheese, nutmeg, and red pepper flakes (if using). Mix until well combined.
  7. Stuff each chicken breast with the spinach and cheese mixture, dividing it evenly among them.
  8. Place the stuffed chicken breasts in a baking dish. Sprinkle shredded mozzarella cheese on top of each chicken breast.
  9. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  10. Once done, remove the chicken from the oven and let it rest for a few minutes before serving.
  11. Garnish with chopped fresh parsley before serving.
