Instructions:
- Preheat your oven to 375°F (190°C).
- Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket for the stuffing. Be careful not to cut all the way through.
- Season the inside and outside of each chicken breast with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for about 1 minute, or until fragrant.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
- In a mixing bowl, combine the cooked spinach, ricotta cheese, Parmesan cheese, nutmeg, and red pepper flakes (if using). Mix until well combined.
- Stuff each chicken breast with the spinach and cheese mixture, dividing it evenly among them.
- Place the stuffed chicken breasts in a baking dish. Sprinkle shredded mozzarella cheese on top of each chicken breast.
- Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Once done, remove the chicken from the oven and let it rest for a few minutes before serving.
- Garnish with chopped fresh parsley before serving.
Serve your delicious spinach stuffed chicken with your favorite sides, such as roasted vegetables, mashed potatoes, or a fresh salad. Enjoy!
