Ingredients:

For the chicken:

  • 1.5 lbs (about 680g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons ghee or butter
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For the sauce:

  • 1/4 cup tomato paste
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons ghee or butter
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground fenugreek (optional)
  • Salt to taste

For the casserole:

  • 2 cups cauliflower rice
  • 1/2 cup shredded mozzarella cheese
  • Fresh cilantro, chopped, for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Heat 2 tablespoons of ghee or butter in a large skillet over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.

  3. Add the chicken pieces to the skillet and season with ground turmeric, coriander, cumin, paprika, salt, and pepper. Cook the chicken until it's browned on all sides and cooked through. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add 2 tablespoons of ghee or butter and tomato paste. Cook for 2-3 minutes, stirring constantly.

  5. Pour in the chicken broth and heavy cream, and stir to combine. Add garam masala and ground fenugreek, if using. Simmer the sauce for 5-7 minutes, until it thickens slightly.

  6. Meanwhile, steam the cauliflower rice until it's tender but not mushy.

  7. In a large mixing bowl, combine the cooked chicken, cauliflower rice, and the prepared sauce. Mix until everything is evenly coated.

  8. Transfer the mixture into a greased casserole dish and spread it out evenly.

  9. Sprinkle the shredded mozzarella cheese on top of the casserole.

  10. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.

  11. Once done, remove from the oven and let it cool for a few minutes before serving.

  12. Garnish with chopped fresh cilantro if desired.
