Keto Low-Carb Chicken Alfredo Zucchini Noodles

Ingredients:

  • 2 medium-sized zucchinis
  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

Using a spiralizer, spiralize the zucchinis into noodles. Set aside.

Season the chicken breasts with salt and pepper on both sides.

Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.

Reduce the heat to medium-low. Pour in the heavy cream and stir well, scraping up any browned bits from the bottom of the skillet.

Stir in grated Parmesan cheese and Italian seasoning until the sauce is smooth and creamy.

Slice the cooked chicken breasts into thin strips and return them to the skillet. Stir to coat the chicken evenly with the Alfredo sauce.

Add the zucchini noodles to the skillet and toss to coat them in the sauce. Cook for 2-3 minutes, until the noodles are heated through and slightly softened.

Remove from heat and garnish with chopped fresh parsley if desired before serving.
