Ingredients:

  • 4 boneless, skinless chicken breasts, cut into strips or chunks
  • 1 cup all-purpose flour
  • 1 cup shredded coconut (unsweetened)
  • 2 eggs, beaten

Instructions:

  1. In a shallow dish, mix together the flour, shredded coconut, garlic powder, onion powder, paprika, salt, and pepper until well combined.

  2. In another shallow dish, beat the eggs.

  3. Dip each chicken piece into the beaten eggs, then dredge them in the coconut-flour mixture, making sure to coat them evenly. Press the coconut mixture onto the chicken to ensure it sticks.

  4. Heat about 1 inch of cooking oil in a large skillet or frying pan over medium-high heat.

  5. Once the oil is hot, carefully add the coated chicken pieces in batches, making sure not to overcrowd the pan. Fry the chicken for about 4-5 minutes on each side, or until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (75°C).

  6. Remove the fried chicken from the oil and transfer them to a paper towel-lined plate to drain any excess oil.

  7. Serve the coconut fried chicken hot with your favorite dipping sauce, such as sweet chili sauce, mango salsa, or garlic aioli. Enjoy!
