Ingredients:

  • 1 teaspoon cornstarch

For the fried rice:

  • 2 cups cooked white rice, chilled (day-old rice works best)
  • 2 tablespoons sesame oil, divided
  • 2 boneless, skinless chicken breasts, diced
  • Salt and pepper to taste
  • 1 cup mixed vegetables (such as diced bell peppers, carrots, peas, and corn)
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish, optional)

Instructions:

For the teriyaki sauce:

  1. In a small saucepan, combine soy sauce, water, rice vinegar, brown sugar or honey, minced garlic, and grated ginger.

  2. In a small bowl, mix cornstarch with 1 tablespoon of water until dissolved. Add the cornstarch mixture to the saucepan.

  3. Heat the saucepan over medium heat, stirring constantly, until the sauce thickens and becomes glossy, about 2-3 minutes. Remove from heat and set aside.

For the fried rice:

  1. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add diced chicken breasts and season with salt and pepper. Cook until the chicken is cooked through and golden brown, about 5-6 minutes. Remove the chicken from the skillet and set aside.

  2. In the same skillet, add the remaining tablespoon of sesame oil. Add the mixed vegetables and minced garlic. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.

  3. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked through, then mix them with the vegetables.

  4. Add the cooked rice and cooked chicken to the skillet. Pour the teriyaki sauce over the rice and chicken. Stir-fry everything together until well combined and heated through.

  5. Garnish the Chicken Teriyaki Fried Rice with chopped green onions and sesame seeds, if desired.
