 Chicken Marsala is a classic Italian dish featuring tender chicken breasts cooked in a savory Marsala wine sauce. Here's a recipe for you to enjoy:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1/4 cup heavy cream (optional, for a creamy sauce)
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

  1. Begin by preparing the chicken breasts. Place each chicken breast between two pieces of plastic wrap and gently pound them to an even thickness of about 1/2 inch. Season both sides of the chicken breasts with salt and pepper.

  2. Dredge the seasoned chicken breasts in flour, shaking off any excess.

  3. In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Once hot, add the chicken breasts to the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and transfer to a plate. Cover loosely with foil to keep warm.

  4. In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the sliced mushrooms and minced garlic. Cook, stirring occasionally, until the mushrooms are golden brown and tender, about 5-6 minutes.

  5. Pour the Marsala wine into the skillet, scraping up any browned bits from the bottom of the pan with a wooden spoon. Let the wine simmer for a few minutes to reduce slightly.

  6. Stir in the chicken broth and bring the mixture to a simmer. Let it cook for another 5 minutes to allow the flavors to meld together and the sauce to thicken slightly.

  7. If desired, stir in the heavy cream to add richness to the sauce. Let it simmer for an additional 2-3 minutes.

  8. Return the cooked chicken breasts to the skillet, spooning the mushroom Marsala sauce over the top.

  9. Let the chicken simmer in the sauce for a few minutes to heat through and absorb the flavors.

  10. Garnish the Chicken Marsala with chopped fresh parsley before serving.
