 Chicken enchilada casserole is a comforting and flavorful dish that combines layers of shredded chicken, enchilada sauce, tortillas, and cheese. Here's a simple recipe to make it:

Ingredients:

  • 2 cups shredded cooked chicken (rotisserie chicken works well)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 8 small corn or flour tortillas
  • 2 cups shredded cheese (such as cheddar, Monterey Jack, or a blend)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies, drained
  • 1/2 cup chopped fresh cilantro (optional, for garnish)
  • Sour cream, sliced avocado, and sliced jalapeños (for serving, optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray.
  2. Spread a thin layer of enchilada sauce on the bottom of the baking dish.
  3. Arrange a layer of tortillas over the sauce, tearing them into smaller pieces if needed to fit the dish.
  4. In a mixing bowl, combine the shredded chicken, black beans, diced green chilies, and about 1/2 cup of enchilada sauce. Mix until well combined.

  8. Top with a final layer of tortillas and pour the remaining enchilada sauce evenly over the top.
  9. Sprinkle the remaining shredded cheese on top of the casserole.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes, or until the casserole is hot and bubbly.
  11. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and lightly golden brown.
  12. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
  13. Garnish with chopped fresh cilantro, if desired, and serve with sour cream, sliced avocado, and sliced jalapeños on the side.
