Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup steamed broccoli florets, chopped

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or cooking spray.

  2. Using a sharp knife, cut a pocket into each chicken breast by slicing horizontally along the side, being careful not to cut all the way through. Season the chicken breasts with salt and pepper, both inside and out.

  3. In a mixing bowl, combine the chopped steamed broccoli, shredded cheddar cheese, softened cream cheese, minced garlic, and Italian seasoning. Mix until well combined.

  5. Place the stuffed chicken breasts in the prepared baking dish. Sprinkle the grated Parmesan cheese evenly over the top of each chicken breast.

  6. Drizzle a little olive oil over the chicken breasts to help them brown in the oven.

  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

  8. Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.

  9. Serve the keto broccoli-stuffed chicken hot, garnished with additional grated Parmesan cheese and fresh herbs if desired.
