Instructions:
Preheat your oven to 375°F (190°C).
Use a sharp knife to carefully butterfly each chicken breast by slicing horizontally through the center, leaving one side attached to create a pocket.
Season the inside of each chicken breast pocket with salt and pepper.
Place a slice of mozzarella cheese and a spoonful of chopped sun-dried tomatoes (if using) inside each chicken breast pocket.
Close the chicken breast pockets, securing the filling inside.
