 Here's a simple recipe for Easy Chicken Cordon Bleu:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 4 slices ham
  • 4 slices Swiss cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil or melted butter

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

  2. Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound the chicken to an even thickness, about 1/4 inch thick.

  3. Season both sides of the chicken breasts with salt and pepper.

  4. Place a slice of ham and a slice of Swiss cheese on top of each chicken breast.

  5. Starting from the shorter end, roll up each chicken breast tightly, making sure the filling stays inside. Secure the chicken breasts with toothpicks if needed.

  6. Place the flour, beaten eggs, and breadcrumbs in three separate shallow bowls.

  7. Dip each rolled chicken breast first in the flour, shaking off any excess, then in the beaten eggs, and finally coat it evenly with breadcrumbs.

  8. Place the coated chicken breasts seam-side down on the prepared baking sheet.

  9. Drizzle olive oil or melted butter over the top of the chicken breasts.

  10. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.

  11. Once cooked, remove the toothpicks from the chicken breasts before serving.

  12. Serve the Easy Chicken Cordon Bleu hot with your favorite side dishes, such as mashed potatoes, steamed vegetables, or a green salad.
