Chicken and asparagus casserole is a comforting and wholesome dish that's perfect for a family dinner or a gathering with friends. Here's a simple recipe to make it:

Ingredients:

2 cups cooked chicken, shredded or diced

1 lb (about 450g) asparagus, trimmed and cut into bite-sized pieces

2 tablespoons butter

2 cloves garlic, minced

1 small onion, finely chopped

2 tablespoons all-purpose flour (or almond flour for a low-carb option)

1 cup chicken broth

1 cup heavy cream (or unsweetened almond milk for a lighter option)

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

1 cup shredded mozzarella cheese

Optional: 1/4 cup chopped fresh parsley for garnish

 Instructions:

Preheat Oven: 

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or cooking spray.

Cook Asparagus:

Stir in the grated Parmesan cheese until it's melted and the sauce is smooth. Season with salt and pepper to taste.

Combine Ingredients: 

In the prepared baking dish, layer the cooked chicken and asparagus. Pour the creamy sauce over the chicken and asparagus, spreading it evenly.

Top with Cheese: 

Sprinkle shredded mozzarella cheese over the casserole, covering it evenly.

Bake: 

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.

Garnish and Serve: If desired, garnish the casserole with chopped fresh parsley before serving.
