  • 1 pound (about 500g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup frozen corn kernels
  • 1 can (15 ounces) black beans, drained and rinsed
