  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary leaves (or 1 teaspoon dried rosemary)
  • 1 lemon, halved
  • 1 onion, quartered
  • 2-3 sprigs of fresh thyme and rosemary (optional, for garnish)

Instructions:

  1. Preheat the Oven:

  5. Stuff the Chicken:

    • Place the lemon halves, onion quarters, and fresh herb sprigs (if using) inside the cavity of the chicken.
  6. Roast the Chicken:

    • Place the chicken breast-side up on a roasting rack set inside a roasting pan or on a rimmed baking sheet.
    • Roast the chicken in the preheated oven for 60-75 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh and the juices run clear.
  7. Rest and Serve:

    • Once the chicken is cooked, remove it from the oven and let it rest for about 10 minutes before carving.
    • Carve the chicken and serve it with your favorite side dishes, such as roasted vegetables, mashed potatoes, or a fresh salad.
