  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach leaves

Instructions:

Heat the olive oil or avocado oil in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.

Add the chopped onion and sliced bell pepper to the skillet. Cook for 3-4 minutes until the vegetables start to soften.

Season the chicken breast pieces with salt and pepper to taste.
