Keto Sesame Stir Fry

Here's a recipe for Keto Sesame Stir Fry:

Ingredients:

For the stir-fry:

  • 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (use a mix of colors for visual appeal)
  • 1 cup snap peas or snow peas
  • 1/2 cup sliced mushrooms
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Optional: sliced green onions for garnish

For the sauce:

  • 1/4 cup soy sauce or tamari (for gluten-free option)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon erythritol or low-carb sweetener of choice
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon arrowroot powder or xanthan gum (for thickening, optional)

Instructions:

  1. In a small bowl, whisk together all the ingredients for the sauce. Set aside.

  2. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.

  3. Add the thinly sliced chicken breasts to the skillet and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant.

  5. Add the broccoli florets, bell peppers, snap peas, and sliced mushrooms to the skillet. Stir-fry the vegetables for 3-4 minutes, or until they are tender-crisp.

  6. Return the cooked chicken to the skillet with the vegetables.

  7. Pour the sauce over the chicken and vegetables in the skillet. Stir well to coat everything evenly.

  8. If using arrowroot powder or xanthan gum for thickening, sprinkle it over the stir-fry and stir quickly to combine.

  9. Continue cooking for another 1-2 minutes, until the sauce thickens slightly and everything is heated through.

  10. Remove the skillet from the heat and sprinkle the Keto Sesame Stir Fry with sesame seeds and sliced green onions for garnish.

  11. Serve hot and enjoy your delicious Keto Sesame Stir Fry! This dish is perfect on its own or served over cauliflower rice for a complete meal.
