Keto Low Carb Chicken Curry

 

Here's a keto-friendly recipe for chicken curry:

Ingredients:

  • 1.5 lbs (about 700g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 2 tablespoons coconut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • Salt, to taste
  • Chopped fresh cilantro, for garnish (optional)
  • Cauliflower rice, for serving (optional)

Instructions:

  1. Season the chicken pieces with salt and pepper.

  2. Heat coconut oil in a large skillet or pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

  8. Garnish with chopped fresh cilantro, if desired.

  9. Serve the keto chicken curry hot, with cauliflower rice or your favorite low-carb side dish.
