Keto Garlic Cheddar Soup

Ingredients:

4 heads of garlic

2 tablespoons olive oil

4 cups chicken or vegetable broth

1 cup heavy cream

2 cups shredded sharp cheddar cheese

Instructions:

Roast the Garlic:

Preheat your oven to 400°F (200°C).

Cut off the top quarter of each head of garlic to expose the cloves.

Place the garlic heads on a piece of aluminum foil and drizzle with olive oil. Wrap the garlic in the foil and place it on a baking sheet.

Roast in the preheated oven for 30-35 minutes, or until the garlic cloves are soft and caramelized. Remove from the oven and let cool slightly.

Prepare the Soup:

Once the roasted garlic has cooled, squeeze the cloves out of the skins into a blender or food processor.

Add the chicken or vegetable broth to the blender along with the roasted garlic. Blend until smooth.

Pour the garlic mixture into a large pot and place it over medium heat.

Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is smooth and creamy. Season with salt and pepper to taste.
