Keto Buffalo Chicken Roll Ups


 Here's a keto-friendly recipe for buffalo chicken rolls:

Ingredients:

  • 1 lb (about 450g) boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/4 cup hot sauce (such as Frank's RedHot)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 8 slices of bacon
  • 4 oz cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • Chopped green onions, for garnish (optional)
  • Ranch or blue cheese dressing, for dipping

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Season the chicken breasts with salt and pepper on both sides. Place them on the prepared baking sheet.

  3. In a small bowl, whisk together the hot sauce, melted butter, olive oil, garlic powder, onion powder, paprika, and cayenne pepper (if using). Brush the mixture over the chicken breasts, coating them evenly.

  4. Bake the chicken breasts in the preheated oven for 20-25 minutes, or until cooked through and no longer pink in the center. Remove from the oven and let them cool slightly.

  5. While the chicken is baking, cook the bacon slices in a skillet over medium heat until crispy. Drain on paper towels and let cool.

  6. Once the chicken is cool enough to handle, shred it using two forks or your hands. Place the shredded chicken in a large mixing bowl.

  7. Add the softened cream cheese, shredded cheddar cheese, and crumbled blue cheese (if using) to the bowl with the shredded chicken. Mix until well combined.

  8. Lay out the cooked bacon slices on a clean surface. Divide the chicken mixture evenly among the bacon slices, spreading it out in a line along one edge of each slice.

  9. Roll up the bacon slices tightly, enclosing the chicken mixture inside.

  10. Place the bacon-wrapped chicken rolls seam-side down on the prepared baking sheet.

  11. Bake in the preheated oven for 10-15 minutes, or until the bacon is crispy and the filling is heated through.

  12. Remove from the oven and let the buffalo chicken rolls cool for a few minutes before serving.

  13. Garnish with chopped green onions, if desired, and serve with ranch or blue cheese dressing for dipping.
