Keto Broccoli Cheddar Chicken



Here's a delicious recipe for Keto Broccoli Cheddar Chicken:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil or non-stick cooking spray.

  2. Season the chicken breasts with salt and pepper on both sides.

  3. Heat olive oil in a skillet over medium-high heat. Once hot, add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Transfer the chicken to the prepared baking dish.

  4. In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Add broccoli florets and sauté for another 3-4 minutes until slightly tender.

  5. In a small bowl, whisk together heavy cream, chicken broth, Dijon mustard, dried thyme, and paprika.

  6. Pour the cream mixture over the broccoli in the skillet. Stir well and let it simmer for 2-3 minutes until slightly thickened.

  7. Spoon the broccoli mixture over the chicken breasts in the baking dish.

  8. Sprinkle shredded cheddar cheese over the top of the chicken and broccoli.

  9. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

  10. Once done, remove from the oven and let it cool for a few minutes before serving.

  11. Garnish with chopped fresh parsley if desired before serving.
