Green Chili Chicken Casserole

 

Here's a delicious recipe for green chili chicken casserole that's sure to be a hit:

Ingredients:

  • 3 cups cooked shredded chicken
  • 1 can (4 oz) diced green chilies, drained
  • 1 can (10 oz) green enchilada sauce
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 6 low-carb tortillas (6 inches each), cut into strips
  • Chopped fresh cilantro, for garnish (optional)
  • Sliced jalapeños, for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

  2. In a large mixing bowl, combine the shredded chicken, diced green chilies, green enchilada sauce, sour cream, shredded Monterey Jack cheese, shredded cheddar cheese, ground cumin, garlic powder, salt, and pepper. Mix well to combine.

  3. Spread a thin layer of the chicken mixture on the bottom of the prepared baking dish.

  4. Arrange half of the tortilla strips over the chicken mixture in the baking dish.

  5. Spoon half of the remaining chicken mixture over the tortilla strips.

  6. Repeat the layers, ending with a layer of chicken mixture on top.

  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

  8. Remove the foil and sprinkle additional shredded cheese on top if desired. Return the casserole to the oven and bake, uncovered, for an additional 10-15 minutes, or until the cheese is melted and bubbly.

  9. Remove the casserole from the oven and let it cool for a few minutes before serving.

  10. Garnish with chopped fresh cilantro and sliced jalapeños if desired.
