Instructions:

Preheat the Oven:

 Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with non-stick cooking spray or olive oil.

Prepare the Chicken: 

Season the diced chicken breasts with salt and pepper to taste.

Cook the Chicken:

In a small bowl, whisk together the lemon juice, chicken broth, and dry white wine (if using). Pour the liquid mixture over the chicken and vegetables in the baking dish.

Bake:

 Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

Serve: 

Once baked, remove the foil from the baking dish. Serve the Greek Chicken Casserole hot, over cooked rice, quinoa, or cauliflower rice.
