Instructions:
Marinate the Chicken:
In a bowl, mix the chicken pieces with soy sauce, chili sauce, ginger-garlic paste, and salt. Let it marinate for at least 30 minutes.
Prepare the Coating:
In another bowl, mix cornstarch, all-purpose flour, and salt. Toss the marinated chicken in this mixture until evenly coated.
Fry the Chicken:
Heat oil for deep frying in a pan or wok. Fry the coated chicken pieces in batches until they are golden brown and crispy. Drain excess oil on paper towels and set aside.
Make the Sauce:
In a separate pan or wok, heat 2 tablespoons of oil. Add thinly sliced onions, sliced capsicum, and slit green chilies. Stir-fry for a couple of minutes until they are slightly softened but still crunchy.
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Mix soy sauce, chili sauce, tomato ketchup, vinegar, sugar, and salt. Stir well to combine.
Add the cornstarch slurry and cook until the sauce thickens and coats the back of a spoon.
Combine Chicken and Sauce:
Add the fried chicken pieces to the sauce and toss until they are well coated with the sauce. Cook for a couple of minutes to heat everything through.
Serve:
Garnish with chopped spring onions if desired.
Serve hot as a starter or as a side dish with steamed rice or noodles.
Enjoy the spicy and flavorful Dragon Chicken! Adjust the amount of green chilies according to your spice preference.
