Chicken Thighs with Mushroom Sauce

Ingredients:

For the Chicken Thighs:
  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 1 tablespoon olive oil
For the Mushroom Sauce:
  • 2 tablespoons butter
  • 8 ounces mushrooms, sliced (button or cremini)
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley (optional)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Chicken Thighs:

    • Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.
    • Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken thighs skin-side down. Cook for about 6-8 minutes per side, or until golden brown and cooked through. Remove the chicken thighs from the skillet and set aside.
  2. Make the Mushroom Sauce:

    • In the same skillet, melt the butter over medium heat. Add the sliced mushrooms and minced garlic to the skillet. Cook, stirring occasionally, until the mushrooms are golden brown and tender, about 5-7 minutes.
    • Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let the broth simmer for a few minutes to reduce slightly.
    • Stir in the heavy cream and Dijon mustard, and let the sauce simmer until it thickens to your desired consistency, about 3-4 minutes.
    • Season the sauce with salt and pepper to taste. If using, stir in chopped fresh parsley for added flavor.
  3. Serve:

    • Return the chicken thighs to the skillet, spooning some of the mushroom sauce over the top.
    • Let the chicken thighs simmer in the sauce for a couple of minutes to heat through.
    • Serve hot, garnished with additional chopped parsley if desired.
