Chicken stir-fry is a quick and versatile dish that's perfect for busy weeknights. Here's a simple recipe to make it:

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil, divided
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 cup snap peas or snow peas
  • Cooked rice or noodles, for serving
  • Sesame seeds and chopped green onions, for garnish (optional)

Instructions:

  1. Marinate the Chicken:

    • In a bowl, combine the sliced chicken with soy sauce, oyster sauce, and hoisin sauce. Let it marinate for 15-30 minutes.
  2. Prepare the Sauce:

    • In a small bowl, mix together soy sauce, oyster sauce, hoisin sauce, and sesame oil. Set aside.
  3. Stir-Fry the Ingredients:

    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
    • Add the marinated chicken and stir-fry for 3-4 minutes until it's no longer pink. Remove the chicken from the skillet and set aside.
    • In the same skillet, heat the remaining tablespoon of vegetable oil.
    • Add minced garlic and grated ginger, and cook for about 30 seconds until fragrant.
    • Add sliced onion, bell pepper, broccoli florets, julienned carrot, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Combine and Serve:

    • Return the cooked chicken to the skillet.
    • Pour the sauce over the chicken and vegetables. Stir well to combine and coat everything evenly.
    • Cook for an additional 1-2 minutes until the sauce thickens slightly.
    • Serve the chicken stir-fry hot over cooked rice or noodles.
    • Garnish with sesame seeds and chopped green onions, if desired.
