Ingredients:

For the meat sauce:

  • 1 pound ground beef
  • 1/2 onion, diced

  • 1 teaspoon dried oregano

Instructions:

  1. Preheat your oven to 375°F (190°C).

  3. Stir in the crushed tomatoes, tomato paste, dried oregano, and dried basil. Season with salt and pepper to taste. Simmer the sauce for 10-15 minutes, stirring occasionally, until thickened.

  4. In a mixing bowl, combine the ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, egg, dried parsley, salt, and pepper. Mix until well combined.

  5. To assemble the lasagna, spread a thin layer of the meat sauce on the bottom of a 9x13-inch baking dish. Arrange a layer of zucchini slices on top of the sauce, slightly overlapping them.

  6. Spread half of the cheese mixture evenly over the zucchini layer. Top with half of the remaining meat sauce.

  7. Repeat the layers: zucchini slices, remaining cheese mixture, and remaining meat sauce.

  8. Sprinkle the top of the lasagna with shredded mozzarella cheese.

  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

  10. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

  11. Remove the lasagna from the oven and let it cool for a few minutes before slicing.

  12. Garnish with fresh basil leaves if desired, and serve hot.
