Ingredients:

  • 1/4 cup unsalted butter, softened

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the almond flour, coconut flour, granulated erythritol, baking powder, and salt.

  3. Add the eggs, melted butter, and vanilla extract to the dry ingredients. Mix until a dough forms. If the dough is too dry, you can add a little more melted butter or almond milk.

  4. Place the dough between two sheets of parchment paper and roll it out into a rectangle, about 1/4 inch thick.

  5. In a small bowl, mix together the softened butter, granulated erythritol, and ground cinnamon for the filling. Spread the cinnamon filling evenly over the rolled-out dough.

  6. Starting from one long edge, carefully roll the dough into a tight log. Use a sharp knife to slice the log into 8-10 rolls.

  7. Place the rolls on the prepared baking sheet and bake in the preheated oven for 15-18 minutes, or until golden brown and crispy.

  8. While the rolls are baking, prepare the cream cheese glaze. In a medium bowl, beat together the softened cream cheese, powdered erythritol, heavy cream, and vanilla extract until smooth and creamy.

  9. Once the rolls are done baking, remove them from the oven and let them cool for a few minutes.

  10. Drizzle the cream cheese glaze over the warm rolls and serve.
