  • 1/2 cup (60g) powdered erythritol or low-carb powdered sweetener
  • 2-3 tablespoons unsweetened almond milk

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a donut pan with coconut oil or non-stick cooking spray.

  2. In a large mixing bowl, whisk together the almond flour, coconut flour, granulated erythritol, baking powder, and ground cinnamon (if using).

  3. In a separate bowl, whisk together the eggs, almond milk, melted coconut oil or butter, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until well combined and a smooth batter forms.

  5. Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.

  6. Bake the donuts in the preheated oven for 18-20 minutes, or until they are lightly golden and a toothpick inserted into the center comes out clean.

  7. Remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

  8. If desired, prepare the glaze by whisking together the powdered erythritol, unsweetened almond milk, and vanilla extract until smooth. Dip the cooled donuts into the glaze, then return them to the wire rack to set.

  9. Allow the glaze to set for a few minutes before serving.
