Instructions:

  1. Place each chicken breast between two sheets of plastic wrap or wax paper. Using a meat mallet or rolling pin, pound the chicken breasts to an even thickness of about 1/2 inch. Season both sides of the chicken breasts with salt and pepper.

  2. In a shallow dish, mix together the flour, garlic powder, onion powder, paprika, dried thyme, and cayenne pepper (if using).

  5. Dredge each chicken breast in the seasoned flour, shaking off any excess. Dip the floured chicken breast into the egg mixture, allowing any excess to drip off, then dredge it again in the seasoned flour.

  6. Once the oil is hot, carefully add the chicken breasts to the skillet, working in batches if necessary to avoid overcrowding. Cook the chicken for 5-6 minutes on each side, or until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C). Transfer the cooked chicken to a plate lined with paper towels to drain any excess oil.

  7. To make the gravy, melt the butter in a saucepan over medium heat. Add the flour and whisk continuously for 1-2 minutes to make a roux.

  8. Gradually whisk in the chicken broth and milk or cream, stirring constantly to prevent lumps from forming. Cook the gravy for 3-4 minutes, or until it thickens to your desired consistency. Season with salt and pepper to taste.

  9. Serve the Chicken Fried Chicken hot with the gravy poured over the top. Enjoy with mashed potatoes, biscuits, or your favorite side dishes!
