Preheat your oven to 375°F (190°C).
In a large skillet, melt the butter over medium heat. Add the diced onion and minced garlic, and cook until softened, about 3-4 minutes.
Add the diced chicken, carrots, celery, and mushrooms to the skillet. Cook for another 5 minutes, until the vegetables are slightly tender.
Stir in the chicken broth, heavy cream, dried thyme, salt, and pepper. Bring the mixture to a simmer and cook for 5-7 minutes, until slightly thickened.
While the filling is simmering, prepare the crust. In a mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Cut in the chilled butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Add the sour cream and egg to the flour mixture, and mix until a dough forms.
Transfer the chicken filling to a greased 9-inch pie dish.
Place the dough between two sheets of parchment paper and roll it out into a circle slightly larger than the pie dish. Peel off the top layer of parchment paper, then carefully invert the dough onto the filling. Peel off the remaining parchment paper.
Press the edges of the dough to seal it to the sides of the pie dish.
