Cashew Chicken is a classic Chinese dish that's easy to make and can be adapted for a keto diet. Here's a recipe:

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tablespoons coconut oil or avocado oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup unsalted cashews
  • 3 cloves garlic, minced
  • 1 tablespoon minced ginger
  • 2 green onions, sliced (for garnish)

For the Sauce:

  • 1/4 cup soy sauce or tamari sauce (for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon granulated erythritol or monk fruit sweetener
  • 1 tablespoon arrowroot powder or xanthan gum (for thickening)

Instructions:

  1. Season the chicken pieces with salt and pepper.

  2. In a small bowl, mix together the ingredients for the sauce: soy sauce, rice vinegar, sesame oil, and sweetener. Set aside.

  3. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.

  4. In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant.

  5. Add the sliced bell peppers and broccoli florets to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

  6. Return the cooked chicken to the skillet with the vegetables. Pour the sauce over the chicken and vegetables, and toss everything together until evenly coated.

  7. In a small bowl, mix the arrowroot powder or xanthan gum with a tablespoon of water until dissolved. Add this mixture to the skillet, stirring constantly, until the sauce thickens slightly.

  8. Add the cashews to the skillet and toss to combine.

  9. Cook for an additional 1-2 minutes, until everything is heated through and the sauce has thickened.

  10. Remove from heat and garnish with sliced green onions.

  11. Serve hot over cauliflower rice or on its own as a low-carb meal.
