Instructions:
Season the chicken pieces with salt and pepper.
In a small bowl, mix together the ingredients for the sauce: soy sauce, rice vinegar, sesame oil, and sweetener. Set aside.
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, and sauté for about 1 minute until fragrant.
Add the sliced bell peppers and broccoli florets to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
Return the cooked chicken to the skillet with the vegetables. Pour the sauce over the chicken and vegetables, and toss everything together until evenly coated.
In a small bowl, mix the arrowroot powder or xanthan gum with a tablespoon of water until dissolved. Add this mixture to the skillet, stirring constantly, until the sauce thickens slightly.
Add the cashews to the skillet and toss to combine.
Cook for an additional 1-2 minutes, until everything is heated through and the sauce has thickened.
Remove from heat and garnish with sliced green onions.
Serve hot over cauliflower rice or on its own as a low-carb meal.
Enjoy your flavorful and keto-friendly Cashew Chicken!
