Keto Creme Brulee Bars

 


Here's a recipe for keto-friendly Crème Brûlée:

Ingredients:

  • 4 large egg yolks
  • 1/4 cup (50g) granulated erythritol or low-carb sweetener of choice
  • 1 1/2 cups (360ml) heavy cream
  • 1 teaspoon vanilla extract
  • Boiling water (for the water bath)
  • Additional erythritol or low-carb sweetener (for caramelizing)

Instructions:

  1. Preheat your oven to 325°F (160°C). Place four ramekins in a baking dish or roasting pan and set aside.

  2. In a mixing bowl, whisk together the egg yolks and granulated erythritol until smooth and slightly thickened.

  3. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat.

  1. Slowly pour the hot cream into the egg yolk mixture, whisking constantly to temper the eggs.

  2. Stir in the vanilla extract until well combined.

  9. Just before serving, sprinkle a thin layer of additional erythritol or low-carb sweetener evenly over the surface of each Crème Brûlée.

  10. Caramelize the sweetener using a kitchen torch until golden and bubbly. Alternatively, you can place the ramekins under a broiler for a few minutes until caramelized, but watch carefully to avoid burning.

  11. Allow the caramelized topping to cool and harden for a minute or two before serving.
