Mushroom Chicken For Keto Recipes


 Here's a simple recipe for Keto Mushroom Chicken:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.

  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides and cooked through, about 6-8 minutes per side depending on thickness. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add minced garlic and sliced mushrooms. Cook, stirring occasionally, until the mushrooms are tender and browned, about 5 minutes.

  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Allow the broth to simmer for a few minutes until slightly reduced.

  5. Stir in the heavy cream, dried thyme, and dried rosemary. Bring the mixture to a simmer and cook for another 2-3 minutes until slightly thickened.

  6. Return the chicken breasts to the skillet and spoon some of the mushroom sauce over the top.

  7. Sprinkle grated Parmesan cheese over the chicken and mushrooms, then cover the skillet and simmer for another 2-3 minutes until the cheese is melted and bubbly.

  8. Garnish with chopped fresh parsley if desired before serving.

  9. Serve your Keto Mushroom Chicken hot, with additional sauce spooned over the top if desired.
